In case you haven’t been on Instagram lately (and if you haven’t, WHAT have you been doing?!), Adeline Waugh’s gorgeous unicorn & mermaid toast creations have been SLAYING everyone’s feeds… and for good reason! We caught up with Adeline of Vibrant & Pure to learn more on how she’s been innovating & styling foods that are both healthy AND Instagrammable!

  • As one of the founders of the current food trend, how did your mermaid and unicorn toast creations come intro fruition?

Well, it was all kind of a happy accident (at least for unicorn toast). As a food stylist and healthy recipe developer, I’m always playing around in the kitchen with different ingredients trying to create something unique, healthy and beautiful to look at. I started using beets in EVERYTHING once I realized they would turn anything the most ridiculously beautiful shade of hot pink, so I had been using beet juice to turn my cream cheese pink, and I started thinking, “I wonder if i could use other real food ingredients to create these bright natural pigments?” I used spirulina, turmeric, crushed up freezes dried berries and creates more pastel colors, painted them on toast, and the unicorn toast was born! The mermaid toast trend was more purposeful, I was just trying to evolve and create something new beyond unicorn toast.

  • Where do you call home?

I’m originally from Bethesda, MD (a suburb outside of Washington D.C.) but I’m currently based in South Florida for a few years while my boyfriend completes medical school. Not sure where we’ll end up next- which is exciting!

  • What’s the most fun recipe you’ve created to date?

That’s a tough one…I’m really into the mermaid toast right now. I just think it’s because it combines all my favorite things: it’s aesthetically pleasing, it uses super healthy ingredients, and it’s fun to make!

What do you love most about your job?

I love getting to create every single day. I have always been creative and had no idea where that would end up taking me. To me, conjuring up an image of something I want to create, and then executing it and seeing the image become a reality is so thrilling and satisfying.

What advice would you give to your sixteen year old self?

Oh wow, where to begin? I would say, trust yourself: trust in who you are as a person and trust your path. What I mean by that is that we spend those years being SO worried and consumed by fearing the judgment of others, fearing our own potential failures, wondering who we’re going to become. I would just say to myself to trust that everything’s going to be okay and life takes you in all different directions. I’m truly a believer that everything happens for a reason- the good and the bad.

What’s the best beauty advice you’ve ever received & who gave it to you?

Okay- I’ve finally learned that I am just not a person who looks good with a bunch of black eyeliner. My mother used to always say to me “stop wearing so much eyeliner!!’ (she was especially referring to my stage in high school of wearing thick smudged bottom eyeliner and looking like a raccoon that just crawled out of a gutter). I now much prefer no liner- just a natural coppery shadow paired with a few coats of mascara.

Where do you find the most inspiration?

I think color is my biggest inspiration….I just freaking love color. There’s so many different ways to combine colors and I find it an inspiring challenge to bring out nature’s best and brightest colors in my creations.

You’ve got FIVE minutes to get ready in the morning… what’s your #1 essential?

Okay number one essential for me is my skin. I’ve suffered from cystic acne my whole adult life (that’s actually how I got into my healthy lifestyle and found my career!) so my skin is my number one priority before I walk out the door. I like to cleanse, then use a pH balancing toner, then some kind of anti aging serum with a bunch of skin loving peptides, followed by sunscreen (I’m finally learning), then a bit of foundation. That’s all I really need- if I was trying to look a little more glamorous, i’d put on some copper eyeshadow and mascara, then some blush colored lip liner and a lip balm.

What’s your favorite Soap & Glory product & why?

Probably the bronzer- I’m a bronzer addict! I used to love getting tan, but now I’ve finally wised up to the health concerns and the aging damage. So now- I rely on a good bronzer to give me that sun kissed glow.

What’s your spirit animal?

I bet people would expect me to say the unicorn haha…but I’m going to go with the honey badger, simply because my boyfriend always calls me honey badger (and the honey badger don’t give a s***!) re: the viral video from 2011!

Why do you think the Future is Female?

Because females have the most ideal combination of insurmountable strength and compassion.
